Its soul comes from a white-pressed Pinot Noir. A quiet contradiction in itself – red grapes born as a white wine. Fermentation in oak lends it structure, depth, and those subtle edges that give it true character.
Then begins the real work of patience: for three years it rests on the lees in the bottle. Time that does not hurry, but refines. Each individual bottle is riddled by hand and disgorged by hand. During disgorgement, each bottle receives a small, precise addition of red wine as dosage – a fine, copper-colored accent that gives the sparkling wine additional depth.
