With our Vineyard Ferment Pinot Noir, we present a true passion project: a wine that isn’t fermented in the cellar, but directly in the vineyard. Inspired by experiences in New Zealand, our Pinot Noir grapes ferment in open vats set between the vine rows.
This way, they absorb their surroundings directly – soil, air, light, and the wild yeasts of the vineyard. The result is a Pinot Noir that carries the vitality and originality of the vineyard straight into the glass.
Its creation requires dedication and patience: for three weeks we tended the grapes daily, checking temperature, cap management, and the subtle nuances of fermentation. Afterwards, the young wine matured for two winters in barrels – in the rhythm of the seasons, guided by our biodynamic approach that consciously embraces nature, sun, and moon.
Character: An authentic, vibrant Pinot Noir, deeply rooted in its place of origin – powerful, elegant, and unadulterated.
